California- Silky smooth and well balanced, this wine has layered notes of strawberry, cherry and boysenberry. The fruit flavors are enriched by well integrated oak and blended with Petit Verdot to achieve a substantial body. It's rich and complex with soft tannins and a long finish.

2021 815 Cabernet Sauvignon has aromas of raspberries, blackberries, plum, and mocha with notes of cinnamon and cedar. The wine opens with red fruit flavors, followed by velvety tannins on the mid-palate and notes of black pepper on the long, textured finish.

The winemaker's goal is to find the delicate balance between floral, herbal, wild red fruit (not overly ripe), stone fruit and acid. Enticing aromatics of peach, white cherry and wild raspberry that are balanced by summer flowers, white tea and Provence herbs. Fruitiness, freshness and complexity are the three principal defining characteristics of Segura Viudas Brut. The fruit and the freshness stem from the meticulous care with which we handle our grapes. The complexity comes from a very special technique, which involves autolysis of the yeast cells in the base wine for 3 months before bottling, and a second autolysis of the yeast cells for a minimum of 12 months ageing in bottle.
